DAY 1: Beit Sitti
Overnight in Amman
Begin your culinary journey through Jordan by learning the basics of traditional cuisine as you cook your way through the evening and then sit down to enjoy the meal at Beit Sitti, which is Arabic for “My grandmother’s house”. It is set in a traditional house in Amman where you will enjoy cooking Mezz, a main dish, and Jordan’s favorite dessert, Knafeh.
DAY 2: Hike in Ajloun
Overnight in Ajloun/Amman
Head north to Ajloun for a walk through ancient olive groves, past local villages. You will visit the soap house, where local women make olive oil soap by hand, incorporating traditional herbs and oils. Then visit the Biscuit House and try some home-baked molasses biscuits and olive oil. Have a traditional lunch at the rest-house along the trail where local women make dishes typical to the area, such as makmoura, which is made up of chicken or meat that is roasted in a pot and served on bread with plenty of olive oil.
If it is the season, take part in the olive harvest by helping the locals pick olives.
Spend the night at the Ajloun Nature Reserve or head back to Amman.

DAY 3: A Meal in Madaba
Overnight at the Dead Sea
In the morning, depart to Madaba stopping on the way at the Terra Rossa Olive Press to learn about the process and have an olive oil tasting. Enjoy fresh mana’eesh for breakfast made with Za’tar (Thyme) and Jordanian olive oil.
Then head to St. George Church to see the Byzantine mosaic map of the Holy Land and other sites in the area. For lunch, try Sajjiyeh at Dana Restaurant, Arabic mezze at Haret Jdoudna or other restaurants in Madaba.
After lunch, transfer to Mt. Nebo and visit where Moses viewed the Holy Land, then wind your way down to the lowest point on earth and spend the night at the Dead Sea.

DAY 4: Tomato Time
Overnight in Aqaba
In the early afternoon, proceed to the village of Ghor Mazra’a and meet the community living there, learn about their customs, and help them make Galaya Bandura, a traditional tomato dish for lunch. During the tomato harvest season, guests are welcomed to pick the tomatoes themselves.
After lunch, transfer to Aqaba for overnight and enjoy Sayadieh for dinner which is a traditional fish dish with spiced rice and caramelized onions. You will overnight in Aqaba.
DAY 5: Buried Under the Sand
Overnight in Wadi Rum
Explore the beautiful corals of the Gulf of Aqaba with a morning snorkeling trip and a lunch cruise.
In the late afternoon head to Wadi Rum, the magnificent desert described by T. E. Lawrence as “Vast, Echoing and God-like”. Wadi Rum recently became a UNESCO World Heritage Site and is home to several Jordanian Bedouin tribes.
Watch the sunset as you sip on some traditional Bedouin sweet tea and spend the night at a campsite and enjoy a Bedouin Zarb for dinner.
DAY 6: Cardamom and Coffee
Overnight in Petra
Spend the morning exploring the spectacular Wadi Rum desert by camel, horse, 4x4 jeep, or hiking and enjoy a sumptuous lunch in a Bedouin tent. This is followed by a quick lesson on how to make traditional Bedouin coffee made from freshly roasted coffee beans and cardamom.
Following lunch, transfer to the UNESCO World Heritage Site of Petra. On this night, enjoy a sneak preview of this world wonder by the light of 1000 candles (Petra by Night). Overnight in Petra.
DAY 7: Cooking in PETRA
Overnight in Petra
Tour the ancient rosered city of Petra, which was built by the Nabataeans more than 2000 years ago.
For dinner you will be honing your local cooking skills at the Petra Kitchen.

DAY 8: Mansaf and Wine
Overnight in Amman
After breakfast, enjoy a morning visit to Beidha to see some ancient wine press and learn about the significance of wine to Nabataean rituals.
Travel along the King’s Highway and stop at a vegetable market in Tafileh for tea before continuing on to Karak, the heart of Jordan’s national dish – Mansaf. Learn the skill of making Jameed (dried yoghurt), an important ingredient that finishes this popular dish and dig into some Mansaf for lunch.
Return to Amman and spend the evening at the Winemaker for dinner and tasting of local wines produced by Zumot Winery, several of which have won international awards.
